Introduction

Learn how to serve traditional gambas a la sal like a tapas bar. Cooked in a pan with a bed of salt in only 5 minutes, what’s the secret? A good quality gamba roja prawn, rock salt and lemon juice…that’s it! This is an amazing Spanish prawn tapas or starter dish that will impress all your guests. Serve with ultra chilled manzanilla sherry and crusty bread.

Method

  1. In a bowl mix the salt and lemon juice until you form a paste. Spread the salt on the bottom of a wide frying pan and place on a moderate heat for 3 minutes until it starts smoking.
  2. Place the prawns on the bed of salt and cook for one minute on each side and serve straightaway with lemon wedges and a glass of chilled manzanilla.
