What is Salt Cod?

Also known as Bacalao in Spanish, salt cod is codfish that has been preserved through salting and drying – a centuries-old method used across Southern Europe. This preservation process not only enhances the fish’s shelf life but also intensifies its flavour and gives it a firm, flaky texture ideal for cooking.

To prepare, simply soak the fish in water for 24–48 hours (changing the water regularly) to rehydrate and remove excess salt – a small step that delivers big flavour.
